Savor a delicious, healthy vegetable casserole with squash, tomatoes, cauliflower rice, and cheese - low-carb and grain-free!
Ingredients:
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 cup chopped onion
  • 2 teaspoons taco seasoning
  • 1 (16 ounce) package frozen riced cauliflower, thawed and drained
  • 2 large eggs
  • 3 tablespoons heavy cream
  • 0.5 cup shredded pepper Jack cheese, divided
  • 0.5 medium zucchini, sliced
  • 0.5 medium yellow squash, sliced
  • 2 medium Roma tomatoes, sliced and drained
  • salt and freshly ground black pepper to taste
  • 4 slices lime
  • 4 sprigs cilantro
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 7x10-inch, 2-quart baking dish with oil.
  • Heat 1 tablespoon of olive oil in a skillet until it shimmers. Saute onion with taco seasoning until onion begins to soften, about 3 to 5 minutes.
  • After taking the mixture off the heat, gently fold in the riced cauliflower before transferring the delightful blend into the prepared baking dish.
  • Blend eggs and cream until smooth. Pour mixture over cauliflower and gently incorporate until cauliflower is well coated. Sprinkle 1/4 cup grated pepper Jack cheese over the top.
  • Layer the zucchini, yellow squash, and tomato slices on top of the cheese, then generously drizzle with the remaining olive oil and season with salt and pepper.
  • Bake in preheated oven for 20 minutes. Sprinkle the remaining 1/4 cup of cheese over the vegetables and bake for an additional 10 minutes. Garnish with lime and cilantro.
