Lucky New Year's biscuits with coin shapes, golden egg yolk, and lucky mushroom decoration bring prosperity and good fortune.
Ingredients:
  • 150 g (1 cup plus 2 tablespoons) plain (all-purpose) flour
  • pinch of fine sea salt
  • 80 g (⅓ cup plus 1 teaspoon) unsalted butter at room temp
  • 50 g (6 tablespoons) icing (confectioners') sugar plus extra for dusting and icing
  • 2 free-range egg yolks
  • ½ teaspoon vanilla extract
  • milk for brushing
  • flaked (slivered) almonds
  • glacé cherries halved
Instructions:
  • Preheat the oven to 190°C/375°F/gas 5 and line two large baking sheets with non-stick parchment. In a mixing bowl, combine flour, salt, butter, and icing sugar until it resembles breadcrumbs. Add egg yolks and vanilla extract, then bring everything together into a dough. Roll out the dough to 3mm/⅛in thickness on a surface dusted with icing sugar. Cut out circles with a cookie cutter, place on baking sheets with space between each, and brush with milk. Top each biscuit with a flaked almond in the center. Bake for 8 to 10 minutes until golden. Let cool for a minute on the sheet, then transfer to a wire rack. Place a glacé cherry half on each almond. Mix 1 tablespoon of icing sugar with water to make a paste. Use a fork or toothpick to dot icing onto the cherries for mushroom spots.
