Lucky Charms® Leprechaun Hat Cake

Magically delicious rainbow cake for Lucky the Leprechaun.
Ingredients:
  • 1/4 cup unsalted butter
  • 1 bag (10 oz) large marshmallows
  • 6 cups Lucky Charms™ cereal
  • 2 boxes Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 cups water
  • 1 cup vegetable oil
  • 6 eggs
  • Red, orange, yellow, green, blue and violet food color
  • 2 1/2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 container Betty Crocker™ chocolate decorating cupcake icing
  • 5 pretzel sticks
Instructions:
  • Prepare a 10-inch round cake pan by lining it with plastic wrap sheets and giving the wrap a gentle coat of cooking spray.
  • In a large heavy-bottomed stockpot or Dutch oven, melt butter over low heat. Stir in marshmallows until melted and well combined with the butter. Mix in cereal using a large rubber spatula. Transfer the cereal mixture to a pan and press it down with buttered fingers. Cover and refrigerate until firm, approximately 2 hours.
  • Preheat the oven to 350°F. Grease 2 (8-inch) round cake pans with cooking spray and lightly flour them.
  • In an oversized bowl, use an electric hand mixer to blend cake mix, water, oil, and eggs on low speed until mixed. Scrape sides of the bowl; then beat on medium speed until fully combined and no dry cake mix streaks are visible.
  • Divide the batter into 6 bowls, with around 1 1/3 cups in each. Color one bowl red, one orange, one yellow, one green, one blue, and one violet using food coloring. Pour each colored batter into separate pans. Refrigerate the remaining 4 bowls of batter for later use.
  • Bake the cake layers for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Let the cake layers cool in the pans for 5 minutes, then transfer them to cooling racks to cool completely.
  • Prepare cake pans by thoroughly washing and drying. Bake 2 additional batter colors using the same method. Continue baking cakes until all 6 layers are baked and cooled.
  • Take the chilled Cereal Treat out of the refrigerator and unwrap it. Flip it upside-down onto a serving platter so the smoothest part is facing up. Spread a thin layer of vanilla frosting in the middle of the Cereal Treat. Add the violet cake layer and lightly frost its top. Place the blue cake layer on top and lightly frost it. Repeat with the green, yellow, and orange layers. Finally, add the red cake layer on top without frosting it.
  • In a large bowl, combine the remaining frosting with green food color. Use an electric hand mixer on medium speed until you achieve a vibrant green shade. Frost the entire cake with the green frosting.
  • Using a pastry bag fitted with a plain round tip, pipe lines of chocolate frosting around the base of the cake to make a "hatband." Fill in the lines with more chocolate frosting and smooth it out with an offset spatula. Press 4 pretzels into the chocolate frosting to make a "square buckle." Break one pretzel in half and place half horizontally to the right of the center of the buckle to complete the "buckle latch." (Enjoy the other half of the pretzel!) Store the cake loosely covered with plastic wrap at room temperature.
