Nostalgic goulash with a gourmet twist evoking childhood comfort.
Ingredients:
  • 2 cups water
  • 1 pound ground beef
  • 0.25 cup chopped green bell pepper
  • 0.25 cup chopped onion
  • 1.5 cups canned pinto beans, rinsed and drained
  • 0.75 cup tomato paste
  • 2 tablespoons water
  • 3 tablespoons chili powder
  • 2 teaspoons white sugar
  • 1 (8 ounce) package dry elbow macaroni
Instructions:
  • Sauté ground beef, bell pepper, and onion in a large pot over medium-high heat until beef is browned and crumbly and vegetables are soft, about 5-7 minutes.
  • In a saucepan over medium heat, warm the pinto beans for about 5 minutes until heated through. Then, stir in the tomato paste.
  • In a small bowl, mix together 2 cups plus 2 tablespoons water, chili powder, sugar, salt, and pepper. Stir into the beef mixture, then add the pinto bean mixture. Cover and simmer for 20 minutes.
  • While the goulash is simmering, boil a pot of lightly salted water. Add the elbow macaroni and cook until al dente, about 8 minutes. Drain the pasta.
  • Combine the cooked macaroni with the goulash, cover the pot, and let it simmer for 30 minutes to an hour.
