Elevate classic dessert with fresh lemon zest and juice for tangy, delicious treats.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 1 cup confectioners' sugar
  • 1 tablespoon lemon zest
  • 1 cup butter, softened
  • 2 cups white sugar
  • 0.25 cup all-purpose flour
  • 1 teaspoon baking powder
  • 5 fluid ounces fresh lemon juice
  • 0.25 cup confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish and line it with aluminum foil, leaving an overhang on all sides for easy removal of the dessert. Grease the foil.
  • In a bowl, combine 2 cups of flour, 1 cup of confectioners' sugar, and 1 tablespoon of lemon zest. Add butter and blend until the mixture forms fine crumbs. Press the mixture into the bottom of the prepared dish.
  • Bake until perfectly golden, about 15-20 minutes in preheated oven.
  • Whisk eggs in a stand mixer bowl until they become a lighter color.
  • Combine white sugar, 1/4 cup flour, and baking powder in a bowl, ensuring there are no lumps. Beat the mixture into the eggs until fully incorporated. Add lemon juice and lemon zest; pour over the prepared crust.
  • Bake in a preheated oven until the center is firm and the edges are lightly golden, approximately 25 minutes.
  • Allow the pastry to cool in the pan until it's just warm to the touch, sprinkle with confectioners' sugar, and let it cool completely. Lift the pastry out of the pan using the foil and refrigerate until slightly firm. Cut the pastry into 2-inch squares, then halve each square diagonally to create triangles.
