"Delightful cupcakes bursting with colors to elevate any party!"
Ingredients:
  • 2 1/3 cups Gold Medal™ all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butter or margarine, softened
  • 1 1/4 cups granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2/3 cup milk
  • 1 cup coarsely chopped M&M's® chocolate candies (about 6 1/2 oz)
  • 1 cup granulated sugar
  • 1/2 cup unsweetened baking cocoa
  • 1/2 cup milk
  • 1/4 cup butter or margarine
  • 2 tablespoons light corn syrup
  • 1 1/2 to 2 cups powdered sugar
  • M&M's® chocolate candies (about 3/4 cup)
Instructions:
  • Preheat oven to 350°F. Line 30 regular-size muffin cups with paper baking cups, coat with shortening and flour, or use baking spray with flour.
  • Combine flour, baking powder, and salt in a medium bowl; set aside.
  • In a large bowl, use an electric mixer to beat 1 cup of butter on medium speed for 30 seconds. Slowly add granulated sugar, about 1/4 cup at a time, beating well after each addition and scraping the bowl occasionally. Beat for an additional 2 minutes. Add eggs one at a time, beating well after each addition, followed by 1 teaspoon of vanilla. On low speed, mix in the flour mixture in thirds and the milk in halves, beating just until blended.
  • Scoop batter into muffin cups, filling each about two-thirds full. Top each cup with a generous teaspoon of chopped candies.
  • Bake for 20-25 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes, then remove cupcakes from pans and place on cooling racks. Let cool completely for about 30 minutes.
  • In a 2-quart saucepan, combine 1 cup granulated sugar and cocoa. Add 1/2 cup milk, 1/4 cup butter, and corn syrup. Bring to a boil over medium-high heat, stirring often. Boil for 3 minutes, stirring occasionally. Remove from heat and stir in 1 teaspoon vanilla and powdered sugar until smooth. Frost cooled cupcakes and top each with 5 candy-coated chocolate candies.
