Indulge in guilt-free, no-sugar, gluten-free snack balls.
Ingredients:
  • 12 medjool dates, pitted
  • 28.60 gm honey
  • 4.40 gm vanilla extract
  • 125.00 gm coconut spread
  • 165.00 ml macadamia meal
  • 32.50 gm shredded coconut
  • 62.50 ml roughly chopped dried apricots
  • 10.00 gm Cocoa Powder
Instructions:
  • Combine dates, honey, vanilla, coconut spread, 1/2 cup macadamia meal, 1/4 cup coconut, apricots, and cocoa powder in a food processor. Blend until a thick paste forms.
  • Mix together the leftover macadamia meal and coconut in a small bowl.
  • Take level tablespoons of the mixture and shape them into balls. Coat the balls with the coconut mixture and place them on a plate. Refrigerate for 20 minutes or until firm. Enjoy!
