Indulge in guilt-free peach and macadamia bliss balls for a sweet treat.
Ingredients:
  • 200g dried peaches, chopped
  • 150g (1 cup) macadamia nuts
  • 40.00 ml white chia seeds
  • 11 ⁄ 184.80 gm coconut oil
  • 1 tsp lemon rind, finely grated
  • 70g (2⁄3 cup) desiccated coconut
  • 21.00 gm fresh lemon juice
Instructions:
  • Combine peach, macadamias, chia seeds, oil, rind, and 1⁄3 cup desiccated coconut in a food processor. Pulse until finely chopped. Incorporate lemon juice and continue processing until a sticky mixture forms.
  • Spread the remaining 1⁄ 3 cup desiccated coconut on a plate. Shape level tablespoonfuls of peach mixture into balls, then coat them by rolling them in coconut. Chill the bliss balls in an airtight container in the fridge for 2 hours until firm. Store the bliss balls in the fridge in an airtight container for up to 1 week.
