Indulge in a refreshing summer salad featuring juicy peaches and savory prosciutto.
Ingredients:
  • 100g baby rocket
  • 100g thinly sliced prosciutto
  • 3 yellow peaches, cut into wedges
  • 1/2 x 250g tub cherry bocconcini, drained, torn
  • 40.00 ml chopped fresh chives
  • 62.50 ml French vinaigrette dressing
Instructions:
  • Place a bed of peppery rocket leaves on a serving platter. Tear the savory prosciutto into generous pieces and scatter over the rocket. Arrange the sweet peaches, creamy bocconcini, and fresh chives on top.
  • Drizzle dressing over the salad, season with salt and pepper, and serve.
