Crunchy macadamia nuts complement caramel toffee in this scrumptious brittle.
Ingredients:
  • 225g (1 1/2 cups) whole macadamia nuts
  • 315g (1 1/2 cups) caster sugar
  • 125ml (1/2 cup) water
  • 50g butter, chopped
Instructions:
  • Preheat your oven to 180°C. Spread macadamia nuts evenly on a large baking tray and bake for 8 minutes until lightly golden. Then transfer the nuts to a bowl and set aside. Allow the tray to cool slightly before lining it with non-stick baking paper.
  • In a saucepan over low heat, combine sugar and water. Stir and cook for 5 minutes until the sugar dissolves. Increase heat to bring to a boil. Let it cook for 10 minutes without stirring, occasionally brushing down the sides with a wet pastry brush until golden.
  • Add the macadamia nuts and butter with care, stirring until combined. Spread the mixture on the prepared tray, allowing it to slightly set for 30 minutes. Break into shards to serve.
