Impress guests with nutty candies, an ideal dessert treat.
Ingredients:
  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup chopped macadamia nuts, toasted
  • 3/4 cup flaked coconut, toasted
  • 1/2 cup chopped dried pineapple
  • 3 tablespoons butter, cut into pieces
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
Instructions:
  • Butter the pan generously: use a 17x12-inch half-sheet pan or a 15x10x1-inch pan.
  • Combine sugar and corn syrup in a large microwavable bowl and cover with plastic wrap. Microwave on High for 4 minutes, then uncover and microwave for 7 to 8 minutes until light golden brown. Add nuts, coconut, and pineapple, then microwave for 1 more minute until boiling. Finish by stirring in 3 tablespoons of butter, baking soda, and vanilla.
  • Pour the mixture into a pan and use a lightly greased offset spatula to spread it evenly. Let it cool for 1 hour or until completely cooled. Break the mixture into 2-inch pieces and store tightly covered at room temperature.
