Indulge in these scrumptious oat, macadamia nut, and cinnamon cookies - the ultimate baked treat.
Ingredients:
  • 1 cup butter or margarine, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup old-fashioned or quick-cooking oats
  • 1/2 cup coconut
  • 1/2 cup coarsely chopped macadamia nuts
Instructions:
  • Preheat the oven to 375°F. In a large bowl, use an electric mixer on medium speed to cream together butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla and eggs, beat until well combined. Gradually mix in flour, baking soda, cinnamon, and salt on low speed until fully incorporated. Fold in oats, coconut, and nuts until evenly distributed.
  • Drop teaspoonfuls of dough onto cookie sheets, leaving 2 inches of space between each one, no need to grease the sheets.
  • Bake until golden brown, about 8 to 10 minutes. Let cool for 2 minutes, then transfer from cookie sheets to cooling racks.
