Chewy, crispy coconut cookies made with flaked coconut, butter, and brown sugar. Ready in just 10 minutes!
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup packed brown sugar
  • 0.5 cup white sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1.3333300352097 cups flaked coconut
Instructions:
  • Prepare your ingredients and preheat the oven to 350°F (175°C).
  • In a medium bowl, mix together flour, baking soda, and salt; set aside.
  • Using an electric mixer, combine butter, brown sugar, and white sugar in a large bowl until smooth. Add egg and vanilla, beat until light and fluffy.
  • Add the flour mixture slowly, then mix in the coconut until fully incorporated.
  • Spoon dough onto ungreased cookie sheets, spacing them 3 inches apart.
  • Bake until perfectly golden for 8-10 minutes in the preheated oven. Let the cookies cool briefly on the baking sheet, then transfer to a wire rack to cool completely.
