Delicious coconut oatmeal cornflake cookies with a crispy and chewy texture.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup packed brown sugar
  • 0.5 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup crushed cornflakes cereal
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 1.3329999446869 cups flaked coconut
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine butter, brown sugar, and white sugar in a large bowl until smooth. Mix in egg and vanilla. In another bowl, sift together flour, baking soda, salt, and baking powder, then add to the wet mixture. Stir in oatmeal, crushed cereal, and coconut until well combined.
  • Scoop dough onto a baking sheet leaving 2 inches of space between each cookie. Bake in a preheated oven for 10 to 12 minutes until cookies are lightly browned on the edges and bottom. Transfer to wire racks to cool.
