Tropical chewy coconut macaroons with pineapple, macadamia nuts, and a touch of rum.
Ingredients:
  • 5.5 cups flaked coconut
  • 1 cup finely diced dried pineapple
  • 0.5 cup finely chopped salted macadamia nuts
  • 0.125 teaspoon salt
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon rum flavored extract
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper or a silicone mat.
  • In a large bowl, mix together the flour, coconut, pineapple, macadamia nuts, and salt. Add the sweetened condensed milk, rum extract, and vanilla extract. Spoon out golf ball-sized portions of the dough onto the baking sheets, spacing them 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes until the coconut is perfectly toasted.
