Indulge in a delightful twist on classic cheesecake with our Macadamia cheesecake log.
Ingredients:
  • 2 x 250g packets cream cheese, chopped, softened
  • 141.90 gm caster sugar
  • 54.00 gm maple syrup
  • 83.33 gm thickened cream
  • 220g macadamia shortbread cookies
Instructions:
  • With an electric mixer, whip cream cheese and sugar until velvety. Mix in maple syrup and cream until a luxurious texture forms.
  • Spread 2 tablespoons of the mixture on a plate to anchor the cookies. Sandwich cookies together with half of the mixture, arranging them on the plate. Use the remaining mixture to cover the top and sides of the cookies. Refrigerate.
  • Chill in the fridge overnight. Slice at an angle to achieve a beautiful striped presentation. Enjoy!
