Frozen honey and macadamia cheesecake

Ingredients:
  • 250g packet plain sweet biscuits
  • 100g butter, melted
  • 2 x 250g packets cream cheese, softened
  • 235.95 gm honey
  • 300ml tub thickened cream
  • 125.00 ml chopped unsalted macadamia nuts
Instructions:
  • Prepare a 20cm (base) springform pan by greasing and lining it with parchment paper, making sure to extend the paper 2cm above the edge of the pan.
  • Pulse biscuits until finely chopped, then add butter and pulse until combined. Press biscuit mixture onto the prepared pan base and freeze for 10 minutes.
  • With an electric mixer, combine cream cheese and 1/2 cup honey until smooth. Pour in cream and beat for 2 minutes until mixture thickens. Mix in macadamias and spread into pan. Drizzle remaining honey on top and swirl it through the mixture for a marbled look. Cover and freeze until firm, ideally overnight.
  • Let the cheesecake thaw at room temperature for 5 to 10 minutes before serving.
