Indulge guilt-free in this nutty, low-carb, keto-friendly macadamia bread – a satisfying, sugar-free treat or savory bread alternative.
Ingredients:
  • 1 cup coconut butter
  • 1 cup chopped macadamia nuts
  • 5 eggs, room temperature
  • 1 tablespoon stevia sugar substitute (such as Truvia®)
  • 2 teaspoons baking soda
  • 0.75 teaspoon salt
  • 2.5 tablespoons lemon juice
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and gracefully line a loaf pan with a sheet of parchment paper.
  • In a food processor, combine coconut butter and macadamia nuts and blend until you achieve a creamy nut butter consistency. Then, reduce the speed and add 1 egg. Blend for about 10 seconds. Slowly add the remaining eggs one by one, blending until the mixture is creamy.
  • Stop the food processor and add the stevia, baking soda, and salt. Process for 10-15 seconds to mix. Scrape the sides of the bowl and process until well combined. Add lemon juice and mix on low speed. Scrape the sides of the bowl one more time and blend until fully combined.
  • Transfer the mixture into the greased loaf pan.
  • Bake in the preheated oven for about 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before moving to a wire rack.
