Cool off with peach macadamia ice cream bars.
Ingredients:
  • 825g can peaches (in mango and natural juice)
  • 82.50 ml macadamia nut halves
  • 560.00 gm reduced-fat vanilla ice-cream, softened
Instructions:
  • Prepare a 3cm-deep, 20cm x 30cm lamington pan by greasing it and lining it with baking paper, making sure to leave a 5cm overhang on the long sides.
  • Blend the peach mixture until it's almost smooth, then pour it into the prepared pan. Ensure the surface is smooth, cover it with plastic wrap, and freeze for 2 hours or until it's just firm.
  • Take the pan out of the freezer. Press macadamia nuts gently into the peach mixture. Add a scoop of ice cream on top and smooth it out. Cover the surface with plastic wrap and freeze for 3 hours or until it is firm.
  • Transfer the ice-cream mixture from the pan to a board. With precision, slice the mixture crossways into 10 strips that are 3cm wide. Then, cut each strip in half to create 20 bars. Store in the freezer until serving time.
