Mango, avocado & macadamia salad

Vibrant salad bursting with color and textures.
Ingredients:
  • 1 ripe mango
  • 1 ripe avocado
  • Juice of 1 lime
  • 36.40 gm of olive oil
  • 5.90 gm wholegrain mustard
  • 1 long red chilli, deseeded and sliced
  • 100g rocket leaves
  • 250.00 ml macadamia nuts, crushed
Instructions:
  • Dice the mango and avocado into uniform cubes, being careful not to bruise them. Keep the shapes consistent and set aside.
  • For the zesty dressing, combine lime juice, olive oil, garlic, mustard, and sliced chili in a small bowl.
  • Combine rocket, mango, avocado, and dressing in a large bowl, tossing gently to mix well.
  • Garnish with macadamia nuts before serving.
