Macadamia florentines

Make ahead and refrigerate these tasty florentines for up to 1 month in an airtight container.
Ingredients:
  • 50g unsalted butter, chopped
  • 55g brown sugar
  • 13.40 gm golden syrup
  • 35g plain flour
  • 95g dried fig
  • 105g macadamia
  • 150g milk chocolate melts, melted
Instructions:
  • Preheat the oven to 180C and line a baking tray with baking paper. In a small saucepan over medium heat, combine butter, sugar, golden syrup, and ginger. Stir for 1-2 minutes until the butter melts and the mixture is well combined. Remove from heat and stir in the flour, fig, and macadamia until combined.
  • Using a spoon, place 6 teaspoon-sized portions of the mixture on the tray, leaving space for them to spread. Flatten each portion into a 3cm disc.
  • Bake until golden, then let sit on tray for 2 minutes before transferring to a wire rack to cool completely. Repeat for the remaining mixture in 4 more batches.
  • Take a round-bladed knife or small palette knife to evenly spread a small amount of chocolate over the bottom of each cooled florentine. Allow the chocolate to set before moving on.
