Nectarine summer crumble

Ingredients:
  • 8 nectarines
  • 20.00 gm caster sugar
  • 55g plain flour
  • 35g rolled oats
  • 40.00 ml flaked almonds
  • 18.40 gm California walnuts
  • 40.00 ml macadamia nuts
  • 42.90 gm honey
  • 50g soft butter, chopped
  • 20.00 ml flaked almonds, extra
  • Ice cream or thick natural yoghurt, to serve
Instructions:
  • Preheat oven to a toasty 200°C.
  • Carefully glide a knife along the natural groove of the nectarine, cutting on both sides to separate the halves from the stone. Twist the halves to remove them from the stone.
  • Place the nectarines skin side up in a 2 liter oven-safe dish and evenly sprinkle the sugar over the fruit.
  • In a bowl, mix together the flour, oats, almonds, walnuts, and macadamia nuts. Drizzle with honey and use your hands to rub in the butter until the mixture forms large, coarse crumbs. Spread over the nectarines, sprinkle with extra almonds, and bake for 30 minutes until golden. Serve with ice cream or yogurt.
