Summer nectarine and bocconcini salad

Quick and easy summer salad - ideal for entertaining or relaxing evenings.
Ingredients:
  • 4 thick slices sourdough bread
  • Extra virgin olive oil, to drizzle
  • 1/2 small radicchio lettuce, torn
  • 1 punnet baby herbs, trimmed
  • 2 nectarines, stones removed, sliced
  • 5 bocconcini, torn
  • 55g (1/3 cup) skinless hazelnuts, toasted, chopped
  • Balsamic vinegar, to drizzle
  • Extra virgin olive oil, extra, to drizzle
Instructions:
  • Preheat a chargrill or barbecue grill on high heat. Drizzle the bread with oil and grill for 2-3 minutes on each side until nicely charred.
  • Assemble the bread, lettuce, herbs, nectarine, and bocconcini on a platter. Sprinkle hazelnuts over the top and finish with a drizzle of balsamic vinegar and olive oil.
