Nectarine, mango & raspberry crumble

Ingredients:
  • 4 nectarines, flesh sliced
  • 2 mangoes, flesh sliced
  • 400g raspberries
  • 30.00 ml plain flour
  • 110g caster sugar
  • 42.00 gm lime juice
  • Thick cream, to serve
  • 150g plain flour
  • 4.00 gm baking powder
  • 75g demerara sugar
  • 100g macadamia nuts
  • 75g chilled butter, diced
Instructions:
  • Preheat the oven to 170°C for the perfect cooking temperature.
  • Mix together ripe nectarine and mango slices with juicy raspberries, a sprinkle of flour, a touch of sugar, and a squeeze of refreshing lime juice.
  • Combine all topping ingredients in a food processor and pulse until mixed.
  • Transfer the nectarine and mango mixture to a 2-liter baking dish, sprinkle with the topping, and bake until golden, about 45 minutes. Serve with cream on the side.
