Nectarine bars: Buttery crust topped with fresh fruit, perfect for picnics!
Ingredients:
  • 1.5 cups white sugar, divided
  • 0.5 cup butter
  • 3 nectarines, sliced, divided
  • 1 tablespoon cornstarch
Instructions:
  • Preheat oven to 350°F (175°C) for perfectly baked deliciousness.
  • In a 9x13-inch baking pan, mix the flour and 1/2 cup of sugar. Cut in the butter until the mixture is crumbly. Press down firmly to create an even layer.
  • Bake until the crust is golden brown, about 25 minutes in a preheated oven.
  • Blend 1/3 of the nectarine slices in a blender until smooth, then mix in the cornstarch until well combined.
  • In a large bowl, whisk eggs until light and fluffy using an electric mixer. Slowly add 1 cup of sugar and mix until well combined. Gently fold in the blended nectarine mixture and pour over the hot baked crust.
  • Bake for about 30 minutes until almost set. Allow to cool completely on a rack for 30 minutes to 1 hour, then cut into bars and top with the remaining nectarine slices.
