Refreshing macaroni salad with tangy vinegar dressing, mixed with tomatoes, cheese, peppers, green onions, and celery, all tossed in a flavorful herbed mayonnaise. Perfect for picnics or cozy winter dinners. Serves six.
Ingredients:
  • 1.5 cups macaroni
  • 2 tablespoons cider vinegar
  • 1 cup shredded Cheddar cheese
  • 0.5 cup chopped green bell pepper
  • 0.25 cup chopped celery
  • 3 tablespoons thinly sliced green onion
  • 8 cherry tomatoes
  • 1 cup mayonnaise
  • salt and pepper to taste
  • 0.25 teaspoon Beau Monde ™ seasoning
Instructions:
  • Boil pasta in generously salted water until perfectly al dente, then refresh under cold water and drain well.
  • Combine the pasta and vinegar in a large bowl and mix thoroughly. Let it sit for 15-20 minutes.
  • Combine an irresistible medley of cheese, peppers, celery, green onions, tomatoes, mayonnaise, and seasonings. Blend until all flavors harmonize perfectly, then chill in the refrigerator until the dish is refreshingly cool and ready to enjoy.
