Create a zesty Mexican mac and cheese for a burst of flavor.
Ingredients:
  • 300g macaroni
  • 4 shallots, sliced
  • 1 red capsicum, cut into short thin strips
  • 2 cloves garlic, crushed
  • 40g butter
  • 2 tsp chilli powder
  • 40.00 ml plain flour
  • 250g tasty cheese
  • 400g can large red kidney beans, rinsed and drained
  • Green salad, to serve
Instructions:
  • Boil the macaroni in a large pot of water until al dente following the package instructions.
  • Heat oil in a medium saucepan, sauté shallots, capsicum, and garlic over medium heat for 5 minutes until softened. Then, transfer to a plate and set aside.
  • Melt butter in a pan. Stir in chili powder and flour. Cook for 1 minute over medium-low heat. Gradually stir in milk until smooth.
  • Gently stir until the mixture almost boils, then lower the heat and simmer for 2 minutes. Take off the heat, mix in the grated cheese, and stir until melted.
  • After draining the pasta, return it to the pan. Stir in the cheese sauce until well coated, then gently mix in the shallots, capsicum, and kidney beans. Season with salt and pepper to your liking. Serve right away with a side of green salad.
