Cheesy baked macaroni with spicy Mexican chorizo.
Ingredients:
  • 2 cups elbow macaroni
  • 1 teaspoon cornstarch
  • 4 ounces shredded cheddar cheese (about 1 cup)
  • 4 ounces shredded pepper jack cheese (about 1 cup)
  • 6 ounces Mexican chorizo
  • 1/2 cup minced red onion
  • 2 Tbsp flour
  • 2 teaspoons lime juice
  • 2 Tbsp breadcrumbs
  • 1 Tbsp butter
Instructions:
  • Combine the cornstarch and both cheeses in a bowl to create a creamy and smooth cheese sauce. Set aside to ensure the perfect consistency without any stringiness.
  • Warm the milk in a small saucepan until steam rises, ensuring it stays warm without boiling while you prepare the recipe.
  • Prepare the macaroni pasta: Bring 2 quarts of salted water to a full boil in a large pot. Add the macaroni and cook uncovered until al dente, about 2 minutes less than package instructions.
  • In a medium thick-bottomed saucepan over medium-high heat, cook the chorizo removed from its casing until it sizzles, then reduce heat to medium. Stir often and cook for 2 minutes. Add minced red onion and continue cooking until onions soften, about 3-4 minutes.
  • Once the macaroni is cooked al dente, drain it and set aside. Preheat the oven to 375°F.
  • Prepare the chorizo cheese sauce: Combine flour with chorizo in a pot and mix until well combined. Reduce heat to medium-low and cook, stirring constantly and scraping the bottom of the pot for 2 minutes to form a thick base. Slowly add hot milk, one tablespoon at a time, stirring continuously. Once all the milk is incorporated, bring the mixture to a gentle simmer and cook for an additional 2 minutes. Stir in grated cheese until fully melted into the chorizo milk sauce.
  • Combine the cooked macaroni with the chorizo cheese sauce, then mix in the lime juice.
  • Transfer the macaroni and cheese into a small casserole dish, ensuring an even surface. Sprinkle breadcrumbs over the top and dot with butter. Bake until breadcrumbs are golden, approximately 20-25 minutes. Optionally, garnish with chopped avocados, crema fresca, and fresh cilantro before serving.
