Chicken Fajita Macaroni and Cheese

Cheesy Tex-Mex mac and cheese with zesty fajita seasoning.
Ingredients:
  • 3 1/2 cups uncooked penne pasta (12 oz)
  • 1 tablespoon vegetable oil
  • 1 lb boneless skinless chicken breasts, cut in half lengthwise, then crosswise into 1/2-inch slices
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced poblano chiles
  • 1 cup thinly sliced red onion
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 2/3 cup water
  • 1 3/4 cups milk
  • 3/4 cup heavy whipping cream
  • 3 tablespoons butter
  • 2 cloves garlic, finely chopped
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 cups shredded pepper Jack cheese (6 oz)
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 1 cup crushed tortilla chips
  • 2 tablespoons sliced green onions
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Follow package instructions to cook and drain pasta.
  • In a Dutch oven, heat oil over medium-high heat. Cook chicken for 4 to 6 minutes, stirring occasionally, until no longer pink in the center. Add bell pepper, chiles, and onion; cook for about 2 minutes until onions start to soften. Mix in taco seasoning and water. Simmer for 3 to 4 minutes until slightly thickened. Transfer to a bowl and set aside.
  • Combine milk and whipping cream in a 4-cup glass measuring cup. Return Dutch oven to medium heat and melt butter. Stir in garlic and cook for 30 seconds, stirring frequently. Whisk in flour and salt until smooth, then cook until mixture is smooth and bubbly.
  • Stir in the milk mixture slowly. Increase the heat to medium-high and bring it to a boil while stirring constantly. Let it boil and stir for 1 minute, then lower the heat to medium. Add the cheeses and cook until melted, stirring occasionally. Mix in the pasta and reserved chicken. Take it off the heat and pour the mixture into a baking dish.
  • "Bake for 20-25 minutes until the sauce is bubbling. Garnish with crushed tortilla chips and green onions before serving."
