Indulgent casserole with gooey cheese, crispy bacon, and onion breadcrumbs.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 0.5 cup sour cream
  • 2 tablespoons cream cheese, softened
  • 4 cups grated Asiago cheese
  • 4 cups grated Vermont Cheddar cheese
  • 4 slices bacon
  • 1 large onion, sliced thin
  • 0.125 teaspoon brown sugar
  • 0.25 cup chopped fresh parsley
  • 0.25 cup panko bread crumbs
  • 5 tablespoons all-purpose flour
  • 3 cups milk
  • 0.5 teaspoon ground mustard
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 tablespoon hot pepper sauce
Instructions:
  • 1. Boil generously salted water in a large pot. Add macaroni and cook for 8 minutes (they should be slightly firm). Drain and transfer to a large bowl. Add 1/4 cup of butter and toss gently. In a separate bowl, whisk together sour cream, egg, and cream cheese. Mix into the pasta. Fold in 3 cups of grated Asiago and 3 cups of grated Cheddar cheese. Save 2 cups of cheese for the topping.
  • In a large, deep skillet over medium-high heat, cook the bacon until evenly browned, turning occasionally, about 10 minutes. Drain the cooked bacon on a paper towel-lined plate and chop into small pieces.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • In the pan with the bacon drippings, sauté 2 tablespoons butter, onion, and garlic for 2 minutes. Lower the heat, then stir in the brown sugar and cook for 10 to 15 minutes until the onions are soft and golden. Combine the bacon, parsley, and panko breadcrumbs with the onions, and transfer to a small bowl.
  • Place the skillet back on the stove and melt the remaining 2 tablespoons of butter over medium-low heat. Whisk in the flour until a paste-like, light golden brown mixture forms, which should take about 5 minutes. Slowly pour in the milk while whisking constantly until the mixture simmers and thickens. Add the ground mustard, paprika, salt, pepper, and hot sauce, stirring well. Take the sauce off the heat and allow it to cool for five minutes before serving.
  • Generously coat the macaroni mixture with the sauce while mixing gently. Spread the mixture in a greased 9x13 inch pan. Sprinkle 2 cups of Cheddar cheese evenly on top, then add the onion breadcrumb mixture for a flavorful crunch.
  • Bake until bubbly, hot, and golden brown on top in a preheated oven for approximately 30 minutes.
