Affordable and effortless zucchini pasta bake.
Ingredients:
  • 400g dried macaroni pasta
  • 2 zucchini, ends trimmed, peeled into ribbons
  • 100g day-old crusty white bread, crusts removed, coarsely torn
  • 425g creamy carbonara pasta sauce
Instructions:
  • Preheat your oven to 200°C. Cook the pasta in salted boiling water according to package instructions until it's al dente, adding the zucchini for the last 30 seconds. Drain the pasta and zucchini, then return them to the pan.
  • Place bread in a food processor bowl and pulse until coarsely chopped. Transfer chopped bread to a separate bowl. Drizzle with oil and season generously with salt and pepper. Mix well to coat evenly.
  • Warm the sauce according to the packet directions, then mix it into the pasta until fully incorporated. Season generously with salt and pepper to taste.
  • Pour the pasta mixture into a 2L (8-cup) baking dish. Sprinkle breadcrumbs on top. Bake for 25 minutes until golden. Serve hot.
