Create sweet, caramelized maduros using very ripe plantains with blackened skins. Serve fried plantains as a tasty contrast to savory dishes.
Ingredients:
  • 2 sweet plantains, very ripe
  • 1 cup neutral oil, for frying
Instructions:
  • Prepare the plantains: Trim the ends off each plantain and gently slit along its length without piercing the flesh. Peel off the skin in one piece. Slice the plantains diagonally into 1/2-inch thick pieces.
  • Fry the plantains until golden brown and crispy: Heat 1 cup of oil in a large cast iron pan or nonstick frying pan over medium heat. Add the sliced plantains in a single layer and cook for 2 to 3 minutes per side. Use a fork to flip the plantains and ensure even cooking. Remember not to overcrowd the pan for best results.
  • Drain the fried plantains on a paper-lined plate to remove excess oil. Avoid sticking by removing them from the paper while they're still warm. Serve immediately while hot. Store any leftovers in the fridge in an airtight container for up to 4 days. Reheat in the microwave for a few seconds or in the oven for a few minutes to retain crispiness.
