Encourage kids to eat healthy with a fun "tree" snack using broccolini, carrots, and celery in creamy avocado dip.
Ingredients:
  • 2 large ripe avocados, halved, stones removed, peeled
  • 21.00 gm fresh lemon juice
  • 120g (1/2 cup) spreadable cream cheese
  • 2 carrots, peeled, cut into 6cm sticks
  • 3 celery sticks, ends trimmed, cut into 6cm sticks
  • 1 bunch broccolini, cut into florets
Instructions:
  • In a bowl, combine the avocado, lemon juice, and cream cheese. Mash with a fork until smooth. Transfer the mixture to a shallow serving dish, cover, and refrigerate to chill.
  • Slice carrot and celery sticks with a small sharp knife, leaving them two-thirds attached. Soak in a bowl of ice water in the fridge for 1 hour until they curl. Drain and gently pat dry with paper towel.
  • Place the broccolini in a bowl, pour over boiling water, and let sit for 30 seconds until tender crisp. Refresh the broccolini in cold running water, drain, and pat dry with paper towel.
  • Place the carrot, celery, and broccolini in the avocado mixture. Serve alongside the rest of the carrot, celery, and broccolini.
