Candy-filled sugar cookies with vibrant stained glass windows.
Ingredients:
  • 1 cup sugar
  • 3/4 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 rolls (about 1 oz each) ring-shaped hard candies or other fruit-flavored hard candies
Instructions:
  • In a large bowl, cream together sugar, butter, vanilla and eggs using an electric mixer on medium speed or mix using a spoon. Fold in flour, baking powder, and salt. Cover and refrigerate for about 1 hour until firm.
  • Preheat your oven to 375°F and line a cookie sheet with parchment paper or foil. Roll out one-third of the dough at a time on a lightly floured surface until it's 1/8 inch thick. Use cookie cutters to cut out desired shapes and remove centers if desired. Transfer the cookies onto the prepared parchment paper on the baking sheet.
  • Fill the cutouts with whole or slightly crushed pieces of candy, mixing colors as you like. Use larger pieces as candy melts quickly; avoid using fine candy "dust." (To crush candy, place in a sturdy plastic bag and lightly tap with a rolling pin.) Optionally, place cutouts from the cookie centers over the candies.
  • Bake for 7 to 9 minutes until cookies are golden brown and candy is melted. If candy hasn't fully spread, use a knife to spread it while hot. Let cool on parchment paper for about 30 minutes, then transfer cookies to a cooling rack.
