Delicate raspberry jam tarts perfect for a charming tea party. Sweet pastry shells filled with raspberry jam and buttery egg batter, baked and dusted with confectioners' sugar. Makes 12 tarts.
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 0.25 cup raspberry jam
  • 0.25 cup butter, softened
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon almond extract
  • 2 teaspoons confectioners' sugar for dusting
Instructions:
  • Position oven rack at the bottom, preheat to 375 degrees F (190 degrees C), and lightly grease 12 2-inch tart tins.
  • Roll out the pastry and cut 12 3-inch circles. Place each pastry circle in a tart tin. Spread 1 teaspoon of raspberry jam in each tart shell.
  • In a medium mixing bowl, beat together softened butter or margarine and white sugar until creamy. Mix in egg, then add flour, baking powder, and almond extract, stirring until well combined. Spoon 1 tablespoon of batter into each tart shell.
  • Place the tarts in a preheated oven and bake for 20 minutes until they rise and become firm. Finish by dusting them with confectioners' sugar for a delightful touch.
