Delicate, melt-in-your-mouth cookies, believed to be named after English queen's ladies in waiting.
Ingredients:
  • 1 tablespoon white sugar
  • 0.25 cup butter
  • 0.25 cup milk
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon nutmeg
  • 2 eggs, beaten
  • 2 tablespoons cream sherry
  • 0.75 cup ground almonds
  • 2 tablespoons fruit preserves, any flavor
Instructions:
  • Preheat your oven to 375°F (190°C) for perfectly baked dishes.
  • Combine 1 cup flour and 1 tablespoon sugar in a medium bowl. Add 1/4 cup butter and mix until the texture is smaller than peas. Gradually add 1 tablespoon of milk at a time until the dough is moistened. Shape the dough into a ball and roll it out on a lightly floured surface to 1/8 inch thickness. Use a cookie or biscuit cutter to cut into 2 1/2 inch circles. Gently press the circles into ungreased mini muffin cups, shaping the dough along the bottom and sides. Let it rest while you prepare the next step.
  • In a medium bowl, combine 2 tablespoons of butter, 3/4 cup of sugar, and 1 tablespoon of flour until creamy. Mix in the eggs and sherry, then fold in the ground almonds. Spoon 1/4 teaspoon of jam into each lined cup, followed by 1 tablespoon of the almond mixture on top.
  • Bake in the preheated oven for 15 to 20 minutes until tops are lightly browned. Let cool slightly before removing from muffin tins to cool on wire racks.
