Easy chicken enchiladas for busy families - make ahead and enjoy in one dish.
Ingredients:
  • cooking spray
  • 2 cups diced cooked chicken
  • 3 cups shredded Mexican-blend cheese, divided
  • 0.5 cup sliced roasted red peppers
  • 1 (4.5 ounce) can diced green chile peppers
  • 1 cup sour cream
  • 1 (10 ounce) can enchilada sauce
  • 8 (10 inch) flour tortillas
Instructions:
  • Grease a 9x13-inch baking dish with cooking spray.
  • Combine chicken, 1 1/2 cups of Mexican cheese, roasted peppers, chile peppers, and sour cream in a bowl, ensuring everything is thoroughly mixed together.
  • Warm the enchilada sauce in a large frying pan. Submerge a tortilla in the sauce until fully coated and slightly softened. Add 1/2 cup of the chicken mixture on top.
  • Roll the tortillas with the chicken filling and arrange them seam side-down in the baking dish. Top the enchiladas with the remaining sauce and sprinkle with cheese. Cover the dish with a greased sheet of foil, greased side down, to seal and bake.
  • Chill in the fridge until you're ready to cook, for a maximum of 2 days.
  • Prior to baking, allow the enchiladas to come to room temperature for 30 minutes with the foil cover intact.
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Bake until golden and bubbling, approximately 1 hour in the preheated oven.
