Make-Ahead Cheesy Barbecue Chicken Lasagna Rolls

BBQ-inspired lasagna roll-ups for a flavorful twist on a classic dish.
Ingredients:
  • 16 uncooked lasagna noodles
  • 1 package (8 oz) cream cheese, softened
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 1 teaspoon Cajun seasoning
  • 2 eggs, slightly beaten
  • 3 1/2 cups chopped cooked chicken
  • 1 cup finely chopped green onions
  • 2 cups barbecue sauce
  • 1/4 cup sliced green onion greens
  • 1/4 cup ranch dressing, if desired
Instructions:
  • Cook lasagna noodles in a 5-quart Dutch oven according to package instructions, then rinse with hot water and drain well.
  • In a large bowl, combine cream cheese, 2 cups of shredded Cheddar cheese, and Cajun seasoning using an electric mixer until smooth. Gradually add eggs, one at a time, mixing well after each addition. Gently fold in chicken and finely chopped green onions. Spread a generous portion of the chicken mixture along the center of each lasagna noodle, leaving a small border. Roll up the noodles tightly and place seam side down in a 15x10x1-inch pan lined with foil. Cover loosely with foil and freeze for about 30 minutes until set.
  • Place the frozen rolls into two clearly labeled 1-gallon freezer bags and store in the freezer for up to 3 months.
  • Prepare two 13x9-inch (3-quart) glass baking dishes by spraying them with cooking spray. Take the 16 lasagna rolls out of the freezer bag and divide them evenly, placing 8 rolls in each baking dish. Cover the dishes with foil and let the rolls thaw in the refrigerator for at least 8 hours, but no longer than 24 hours.
  • Preheat the oven to 350°F. Pour 1 cup of barbecue sauce over and around the rolls in each baking dish. Cover tightly with foil and bake for 40 to 50 minutes until hot and bubbly. Remove the foil, sprinkle each dish with 1 cup of shredded Cheddar cheese, and bake uncovered for an additional 3 to 5 minutes until the cheese is melted. Garnish with green onion greens and let it rest for 5 minutes before serving. Drizzle with ranch dressing before serving.
