Prepare flavorful Instant Pot cauliflower rice in advance for a versatile side dish.
Ingredients:
  • 1 (4 pound) cauliflower, cut into large florets
Instructions:
  • In your multi-functional pressure cooker, add 1 cup water and place a trivet inside. Then, place a steamer basket on top of the trivet and add the cauliflower.
  • Securely seal the lid and select high pressure as per the manufacturer's guidelines. Set the timer for 1 minute and patiently wait for the pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method as per the manufacturer's instructions for about 2 minutes. Submerge cauliflower in a bowl of ice water to halt the cooking process.
  • Pulse cauliflower in a food processor until rice-sized. Drain excess water by pressing riced cauliflower in a colander.
  • Portion the cauliflower rice into freezer-safe zip-top bags and freeze for later use.
