Try these Instant Pot Barley Lunch Jars for a convenient and delicious weekday lunch prep! Prep once, enjoy all week.
Ingredients:
  • 1 cup pearl barley
  • 1/2 teaspoon salt
  • 2 1/2 cups salad greens
  • 10 to 12 cherry tomatoes, halved
  • 5 small sweet peppers, sliced
  • 2 small cucumbers, sliced
  • 5 radishes, sliced
  • Vinaigrette , for serving
Instructions:
  • Prepare the barley: Combine dried barley with salt and water in your Instant Pot. Pressure cook on high for 15 minutes. Allow the pressure to release naturally for five minutes. Release steam, drain excess water, and cool barley to room temperature.
  • Start by layering the jars with 1/2 cup of cooled cooked barley at the base. Add a generous amount of salad greens and a variety of sliced vegetables on top for a colorful and nutritious lunch option.
  • Refrigerate the jars for 4-5 days to keep them fresh. The greens will stay crisp and delicious before wilting. Please note these jars are not suitable for freezing and are meant to be enjoyed within the week.
  • For lunch, add vinaigrette to the jar, sprinkle with salt and pepper, enjoy the barley salad straight from the jar or transfer to a plate. Remember, only dress the salad right before serving to keep the veggies crisp.
