Make-Ahead Lasagna Rolls

Prepare lasagna rolls with pasta, three cheeses, and herbs. Refrigerate for quick, delicious meals. Heat in microwave, melt cheese, and top with tomato sauce for a quick and easy dinner anytime.
Ingredients:
  • 8 uncooked lasagna noodles
  • 1 (12-oz.) container low-fat cottage cheese
  • 4 oz. (1 cup) shredded mozzarella cheese
  • 1 egg, slightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried basil leaves
  • 1 (14 to 15-oz.) jar (2 cups) tomato pasta sauce*
  • Chopped parsley, if desired
Instructions:
  • Cook the lasagna noodles according to package instructions until they reach your preferred level of doneness. Drain the noodles. In a medium bowl, thoroughly mix together all remaining ingredients except for the pasta sauce.
  • Spread a generous 1/4 cup of cheese mixture evenly on each cooked lasagna noodle, leaving a 1-inch border at one end. Roll up the noodles tightly towards the unfilled end. Wrap each roll in plastic wrap and refrigerate or freeze the lasagna rolls.
  • Unwrap the lasagna roll and place it seam side down in a microwave-safe bowl. Cover the bowl with microwave-safe waxed paper. If the roll is refrigerated, microwave on HIGH for 1 to 2 minutes until the cheese starts to melt at the ends. Spoon 1/4 cup of pasta sauce over the roll, cover, and microwave on HIGH for 20 to 30 seconds until heated through. For frozen rolls, microwave on LOW for 1 to 2 minutes to thaw before following the heating instructions. Finish by topping with chopped parsley.
