Delicious meal prep wraps packed with beans, corn, tomatoes, and cheese. Simply assemble, freeze, and reheat for a quick and satisfying meal.
Ingredients:
  • 2 cups uncooked brown rice
  • 4 (15 ounce) cans black beans
  • 2 (15.5 ounce) cans pinto beans
  • 1 (10 ounce) can whole kernel corn
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 16 (10 inch) flour tortillas
  • 1 pound shredded pepperjack cheese
Instructions:
  • In a saucepan, bring rice and water to a boil, then cover and simmer on low heat for 35 to 40 minutes until tender. Remove from heat and let cool.
  • Rinse black beans and pinto beans in a colander or strainer, then combine with corn, diced tomatoes with green chiles, cooled rice, and pepper Jack cheese in a large bowl.
  • Evenly distribute the mixture onto the tortillas and roll them up. Individually wrap each in plastic wrap, place them in a large freezer bag, and freeze. Microwave as desired for a quick and convenient lunch or snack.
