Make-Ahead Meat-Lovers' Lasagna Rolls

Prepare and freeze flavorful lasagna rolls using Make-Ahead Seasoned Ground Beef and Sausage for convenient quick dinners.
Ingredients:
  • 16 uncooked lasagna noodles
  • 1 lb lean (at least 80%) ground beef
  • 1/2 lb bulk pork sausage
  • 1/2 cup chopped onion
  • 1 1/2 cups tomato pasta sauce
  • 2 containers (15 oz each) ricotta cheese
  • 1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
  • 2 teaspoons dried basil leaves or Italian seasoning
  • 1 egg
  • 3 cups tomato pasta sauce
  • 2 cups shredded mozzarella cheese (8 oz)
Instructions:
  • In a 5-quart Dutch oven, cook the lasagna noodles according to package instructions. Then, drain, rinse with hot water, and drain well.
  • In a large skillet, brown the beef, sausage, and onion over medium-high heat until cooked through; drain excess fat. Add 1 1/2 cups pasta sauce and simmer uncovered on low heat for 10 minutes, stirring occasionally. Remove from heat.
  • Combine ricotta cheese, spinach, basil, and egg in a small bowl. Spread 3 tablespoons of the ricotta mixture over each cooked lasagna noodle, leaving a 1-inch border at one short end. Top with 1/4 cup of the meat mixture. Roll up tightly towards the unfilled end. Line a 15x10x1-inch pan with foil, place the rolls seam side down on the pan, and cover loosely with foil. Freeze for about 30 minutes until firm.
  • Store the frozen rolls in a sealed airtight container, then label it. Freeze for up to 3 months.
  • Prepare two 13x9-inch (3-quart) glass baking dishes by spraying them with cooking spray. Take 16 lasagna rolls out of the freezer bag and evenly place 8 rolls in each baking dish. Cover both dishes with foil and allow them to thaw in the refrigerator for at least 8 hours, but no more than 24 hours.
  • Preheat the oven to 350°F. Pour 1 1/2 cups of pasta sauce over and around the rolls in each baking dish. Cover tightly with foil and bake for 30 to 40 minutes until hot and bubbly. Sprinkle 1 cup of mozzarella cheese over each baking dish and bake uncovered for an additional 3 to 5 minutes until the cheese is melted. Allow it to rest for 5 minutes before serving.
