Make-Ahead Mexican Ground Beef

Prepare ahead: Seasoned ground beef in freezer for quick taco nights. Easy 2-ingredient recipe using ground beef & Old El Paso™ seasoning. Make 16 servings in 30 minutes. Perfect for busy nights or stocking up on sale items.
Ingredients:
  • 3 lb lean (at least 80%) ground beef
  • 2 packets (1 oz) Old El Paso™ Original Taco Seasoning Mix
Instructions:
  • Cook the beef in a 5-quart Dutch oven or 12-inch skillet over medium-high heat, stirring frequently, until fully cooked; drain any excess fat.
  • Lower the heat to medium, then mix in the taco seasoning. Cook for 3 to 5 minutes, stirring regularly, until the flavors meld together. Allow it to cool for 5 minutes before serving.
  • Prepare a 15x10x1-inch pan by lining it with foil. Spoon the beef onto the foil and break it apart as needed.
  • Spread the meat evenly in the pan.
  • Chill for about 1 hour, giving it a stir halfway through, until it's nice and firm.
  • Portion the mixture into quart-sized resealable freezer bags, each holding approximately 2 cups. (Note: One pound of cooked and drained ground beef yields about 2 cups.) Seal the bags, label them, and store in the freezer for up to 2 months.
