Mexican-inspired ground beef dish with pantry spices. Easy make-ahead family meal served with tortillas, Spanish rice, and charro beans.
Ingredients:
  • 2 pounds ground chuck
  • 2 tablespoons chili powder
  • 2 tablespoons paprika
  • 1.5 teaspoons cumin
  • 0.5 teaspoon garlic powder
  • 2 cloves garlic, chopped
  • 0.5 medium green bell pepper, chopped
  • 0.5 medium onion, chopped
  • 12 (6 inch) corn tortillas
  • 12 ounces queso asadero (white Mexican cheese)
  • 1 (8 ounce) container sour cream
  • 1 large tomato, diced
  • 2 cups shredded lettuce
Instructions:
  • In a large skillet, place the ground chuck and season with chili powder, paprika, cumin, salt, garlic powder, and garlic. Add enough water to cover the meat and bring to a boil. Simmer on low for 1 hour, breaking the meat into small pieces and adding more water if needed.
  • Combine bell pepper and onion in the skillet and let them simmer for 30 minutes. Drain and keep the juices. Remove any fat from the juices (or freeze them to easily remove the fat later if not using immediately). Stir 5 tablespoons of the juices into the skillet with the beef and heat through.
  • Top the tortillas with the beef and garnish with queso asadero, sour cream, tomato, and lettuce for a delicious presentation.
