Authentic tacos de alambre inspired by a beloved Las Cruces eatery.
Ingredients:
  • 8 slices bacon
  • 2 tablespoons olive oil, divided, or more as needed
  • 1 medium onion, diced
  • 4 medium jalapeno peppers, seeded and chopped
  • 1 tablespoon minced garlic
  • 1.5 pounds ground beef
  • 0.25 teaspoon ground black pepper
  • 32 (6 inch) corn tortillas
  • 4 medium roma (plum) tomatoes, diced
  • 1 (8 ounce) package shredded Monterey Jack cheese
Instructions:
  • Fry bacon in a spacious skillet over medium-high heat, flipping occasionally, until perfectly browned, approximately 10 minutes. Place on a paper towel-lined plate to drain, and save the remaining grease in the skillet. Once cooled, crumble the bacon.
  • As the bacon sizzles, warm 1 tablespoon of oil in a separate large skillet over medium heat. Add in the onion, jalapeños, and garlic, cooking and stirring until the onion becomes soft and translucent, approximately 5 minutes. Turn up the heat to medium-high, then incorporate the ground beef, salt, and pepper. Continue to cook and stir until the beef is browned and crumbled, for about 10 to 12 minutes. Remove any extra liquid by draining it off.
  • Add the beef mixture to the skillet with the flavorful bacon grease. Stir in the crumbled bacon until everything is well mixed, then keep it warm on low heat.
  • Heat the remaining tablespoon of oil in a clean skillet over medium-high heat. Place a tortilla in the hot pan and spread a generous spoonful of the beef mixture on the lower half of the tortilla. Cook until bubbles start to form, then fold it in half over the beef. Keep cooking until the taco is crispy and lightly browned on both sides for about 1 to 2 minutes. Repeat the process to fill and cook the rest of the tacos, adding more oil if necessary.
  • Top the tacos with fresh, vibrant tomatoes and a generous sprinkle of creamy Monterey Jack cheese.
