Beef Tacos de Lengua (Beef Tongue Tacos)

Succulent braised beef tongue tacos with garlic, onions, salsa verde, and creamy avocado.
Ingredients:
  • 1 3-4 pound beef tongue
  • 2 large onions, peeled
  • Cloves from 1 head (yes, an entire head) of garlic, peeled and crushed
  • 6-7 bay leaves
  • 1 tablespoon of peppercorns
  • 2 tablespoons salt
  • Vegetable oil
  • Corn tortillas (2 to 3 per person)
  • Salsa verde
  • Avocados
  • Cilantro
  • Chopped red onion
  • Thinly sliced radishes for garnish
Instructions:
  • For flavorful tenderness, gently poach the tongue with onions, garlic, bay leaves, peppercorns, and salt in a large stockpot filled two-thirds with water. Simmer covered for 3 hours until the tongue is soft and tender.
  • Peel off skin: Remove the tongue from water and allow it to cool for a couple of minutes. Peel off the light-colored skin-like covering using your fingers or a sharp small knife and discard it. Optionally, remove the rough patch of meat where the tongue would attach to the bottom of the mouth.
  • Slice the tongue into 1/4-inch slices. If you're not using all of it for tacos, return the remaining tongue to simmer in water. Fry the slices in a pan with oil on medium-high heat until lightly browned on both sides.
  • Dice the tongue into small cubes by slicing first into strips, then cutting crosswise.
  • Prepare the tacos: Warm tortillas on the stove-top until they puff up or in the microwave for about 10 seconds each. Fill each tortilla with a generous portion of meat, top with salsa verde, diced avocado, onion, fresh cilantro, and radish slices.
