Game Day Tacos

Elevate game day with mini taco beef "basketballs" topped with white cheddar, lettuce, and pico de gallo in soft tacos.
Ingredients:
  • 1 lb ground beef (at least 80% lean)
  • 1 1/4 cups finely shredded white cheddar cheese or shredded Monterey Jack cheese
  • 1 package (12.5 oz) Old El Paso™ Soft Taco Dinner Kit
  • 2 1/2 cups shredded lettuce
  • 1 1/4 cups pico de gallo
Instructions:
  • Preheat oven to 400°F and line a 15x10x1-inch pan with foil sprayed with cooking spray.
  • Combine beef, 1/2 cup of shredded cheese, and taco seasoning mix in a bowl. Roll into 30 (1 1/4-inch) balls and place in a pan. Bake for 15-20 minutes until fully cooked. Keep warm.
  • Warm the tortillas as per package instructions. Stuff each tortilla with lettuce, pico de gallo, the rest of the shredded cheese, and 3 meatballs. Enjoy the tacos with the taco sauce provided in the dinner kit.
