Hand pies filled with taco-seasoned beef, pico de gallo, and melted pepper Jack cheese are a tidy twist on classic tacos.
Ingredients:
  • 2 Roma tomatoes, diced
  • 0.5 cup diced white onion
  • 0.25 jalapeno pepper, seeded and diced
  • 0.25 teaspoon garlic salt
  • 1 pound lean ground beef
  • 3 tablespoons taco seasoning mix
  • 0.5 cup shredded pepper Jack cheese
  • 12 frozen empanada wrappers, thawed
  • 1 tablespoon water
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet with parchment paper.
  • Combine tomatoes, onion, fresh cilantro, spicy jalapeno pepper, and garlic salt in a mixing bowl.
  • Sear beef in a saute pan over medium-high heat until cooked through, about 5 to 7 minutes. Discard excess fat and return beef to the pan. Mix in water and taco seasoning until well combined and water is absorbed, for about 2 to 3 minutes. Fold in the tomato mixture and pepper Jack cheese.
  • Dust a work surface with flour. Roll out each empanada wrapper into a 6-inch circle. Place 1/3 cup of beef filling in the center of each wrapper. Fold in half and seal edges by pressing with a fork. Make two fork piercings on top of each empanada before transferring to the baking sheet.
  • Prepare a mixture of whisked egg and water for an egg wash. Coat the tops of the pies with the egg wash using a brush.
  • Bake in the center of the oven until beautifully golden, approximately 20 minutes.
