Savory taco soup with ground beef, beans, corn, and onions, seasoned to perfection. Topped with creamy sour cream, melted cheese, olives, and crispy corn chips.
Ingredients:
  • 2 pounds ground beef
  • 1 (10.75 ounce) can tomato puree
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (1.25 ounce) package taco seasoning mix
Instructions:
  • Brown the beef and onion in a medium stock pot for about 10 minutes, then drain any excess grease if necessary.
  • Combine fresh tomatoes, rich tomato sauce, water, hearty beans, sweet corn, and flavorful taco seasoning in a pot. Bring the mixture to a boil, then lower the heat and simmer gently for 5 minutes.
  • Sprinkle with cheese, corn chips, dollops of sour cream, and scatter with olives.
